After Thanksgiving Crockpot stews/soups?

I am getting a new crockpot next week and want to make my first after Thanksgiving soup or stew with it. I do want potatoes in either one, I love potatoes in my meals. Does anyone know a real good after Thanksgiving recipe using the turkey left overs? I'll use giblets as a base flavoring but I will -not- have them in the actual meal.. I don't eat giblets and will be feeding them to my outdoor kitty cats.
